A perfectly delicious salad is a great option for a light lunch or midday snack. Enjoy this nicely balanced option courtesy of Tree Trunk bistro, filled with lush greens, crunchy veggies and a heaping dose of Halloumi

Salad Ingredients:

1/2 cup kale
1/4 cup sweet corn
1 cucumber
1 tomato
1/2 red pepper
1/2 yellow pepper
1/2 cup rocket
1/2 cup quinoa
1/2 cup parsley
1/4 cup pomegranate seeds
Half a block of Halloumi cut into four slices.

Dressing:

Pomegranate molasses
1 lemon
1/4 teaspoon salt
1/2 teaspoon black pepper

Preparation:

 Mix the pomegranate molasses with lemon, salt and pepper

Cut all the above vegetables

Boil the quinoa in 1 cup of water until cooked

Grill the Halloumi slices in a hot pan (option a drizzle of olive oil)

Mix all the ingredients with the dressing and add the Halloumi on top and serve
