Grilled Cheese Sandwich “The Brie”

Ingredients

  • Brie cheese
  • Crispy beef bacon
  • Apricot jam
  • White or brown bread
  • Butter
  • Balsamic reduction [2 cups balsamic vinegar, ½ cup brown sugar]

Preparation:

Balsamic Reduction

Mix 2 cups balsamic vinegar with ½ cup brown sugar in a saucepan over medium heat, stirring constantly until sugar has dissolved. Bring to a boil, reduce heat to low, and simmer until glaze is reduced by half, about 20 minutes. Glaze should coat the back of a spoon. Let cool and pour into a jar with a lid; store in refrigerator.

 

Sandwich

Top fresh bread with Brie cheese and beef bacon. Grill in butter until cheese is melted and bread is brown and toasty. Top with apricot jam and a balsamic reduction. Serve!
