Smoked Salmon and Avocado Club
Prep Time: 10 minutes
1 small ripe avocado, peeled and pitted
1 tablespoon fresh dill, chopped
1 tablespoon lemon juice
¼ teaspoon salt
¼ teaspoon freshly ground pepper
8 slices of toast
4 teaspoons grainy mustard
4 lettuce leaves
230 g thinly sliced smoked salmon
¼ red onion, sliced
Mash avocado with a fork. Mix with dill, lemon juice, salt and pepper; set aside.
Spread mustard evenly on 4 bread slices. Top with lettuce, salmon and red onion. Dollop the avocado mixture evenly over each sandwich. Top with remaining bread slices.
